A recent clip supports this and proves that players should not assume the opponent is dead until they earn runes for defeating them.

A user named RexNusquam shares a clip of a fight with theGiant Oracle Envoy enemy inElden Ring. These enemies have a lot of health, so it takes the player a while to deplete it. The Giant Oracle Envoy takes a swing at RexNusquam to deal considerable damage, but the user continues the attack. RexNusquam breaks their poise but mistakes the animation for a confirmed kill. They seemingly left the controller to take a breather and did not use Flask of Crimson Tears to regain health.
This mistake proves fatal, as the Giant Oracle Envoy recovers and uses a ground slam attack to defeat RexNusquam. The classic “You Died” appears on the screen to a presumably shocked RexNusquam. To add insult to injury, the enemy continues attacking their body to complete the move’s animation. RexNusquam loses over 9000 Runes due to this mistake, excluding the 5230 Runes they would have received after defeating the Giant Oracle Envoy.

RexNusquam states that they are killing Giant Oracle Envoys, found in a late-game area called Miquella’s Haligtree, for theEnvoy’s Greathorn colossal weapon. One user mentions that they farmed enemies for this weapon for over an hour before getting it and claims it’s not as good as the Envoy’s Long Horn.
